  • Firstly arrange and clean peas and put them to one side.
  • Take a large saucepan and heat up oil over medium temperature. Put some onions in the pan and fry them for 3 minutes till they get gentle. It is advisable to add sausage after 4 minutes especially when the onions are lightly browned.
  • Then mix the soup and boil it where the brown bits will be loosened. Mix peas, peppers, salt and bay leaves. It is advisable to cover the simmer till 45 minutes. The peas will soften down after 45 minutes. You should uncover it and cook for 15 minutes while the liquid begins to solidify.
  • You should thereafter mix tomatoes, vinegar and mustard greens; boil them for 10-15 minutes until the peas get softer. You can easily discard bay leaves.
