- 3 medium cucumbers, peeled and chopped

- 1 can (6 oz.) Greek olives, pitted or 1 can (6 oz.) pitted ripe olives

- In a sealable container, mix the ingredients; cover and shake until properly blended.
- Set aside for a few minutes. In medium sized bowl, add cucumbers, tomatoes, cheese, onion, and olives.
- Pour on dressing. Chill for 30 minutes.
- To bring some variation toss into 2 cups torn romaine lettuce.
