Vegetarian Pita With Garlic Green Peas

Vegetarian Pita with Garlic Green Peas is a low caloric recipe. It is a healthy one and quite delicious as well. The preparation is also easy.

Ingredients :

  • 4 whole-wheat pita rounds, cut into wedges
  • 2 leeks, thinly sliced (1 1/2 cups)
  • 3 Tbs. garlic olive oil, divided
  • 1 tsp. fresh marjoram leaves
  • 1/2 cup low-sodium vegetable broth
  • 2 cups frozen peas, thawed
  • 1 clove garlic, minced (1 tsp.)
  • 2 oz. goat cheese

Directions :

  • Preheat the oven to 375°F temperature. Arrange the pita wedges on a baking sheet and brush properly with 2 Tbs. oil. Bake for 15 minutes, or until chips become crisp.
  • Heat the remaining oil in a saucepan over medium-high heat. Put in leeks, and cook for 3 minutes. Stir in garlic, and cook for another 1 minute. Combine marjoram and broth, and bring to a simmer. Reduce the heat to medium-low, cover, and simmer 5 to 7 minutes. Mix peas, and cook 1 minute more. Let cool slightly.
  • Place mixture in food processor, and blend until becomes smooth. Crumble goat cheese over pea mixture and stir slightly, leaving streaks of cheese visible. Serve with pita chips.
